It starts with a humble sugar maple, the very heart of our syrup. At Maple Glen Sugar House, we believe that the best syrup begins with the right tree: mature maples, sturdy and full of life, with trunks wide enough to give freely without harm.

On crisp early mornings, when the temperature dips below freezing and then climbs again in the daylight, we tap. With gentle hands and steady tools, a drill, a hammer, and a carefully chosen spile, we make the opening that will draw life’s sweetest gift. Sap begins to flow, slowly dripping into clean buckets or sap bags, each container catching the pure, clear essence of the tree.

Collecting sap is a patient art. We return throughout the day, emptying the catchers and gathering the sap into larger pails, storing it carefully in cool, covered containers. Though sap can sit without harm, once warm weather returns, it becomes delicate, and the clock begins ticking. Every drop must be treated with care.

Then comes the heart of our process: transforming sap into syrup. We carry the collected sap to our sugarhouse,  a simple, rustic place built for this very alchemy. Here, we heat it over a steady flame. At first, the sap bubbles gently like water, but as the water escapes into steam, the temperature rises.

As the sap thickens, we watch it closely. Foam forms on top, and we skim it away, listening to the conversation between heat and sugar. When the liquid boils about six or seven degrees above the normal boiling point of water, we know we’re getting close. But the work isn’t done yet. Once we reach the right concentration, we strain the simmered liquid, removing any tiny bits of bark, mineral deposits, or other impurities.

Finally, after hours of careful boiling and constant attention, the sap emerges as golden, amber-rich syrup. What started as a humble trickle has become a rich, fragrant elixir, a taste of the forest, of patient mornings, of centuries-old tradition.
